Take a pan and add in a cup of ragi flour to the pan. Roast the ragi flour on medium flame until the flour is very hot and aromatic. It will take about 5-6 minutes on medium flame. Keep sauteing continuously to avoid burning of the flour. Remove and set aside. Take a pressure cooker and add in 1.5 cups of water and half a teaspoon of salt. Cover and cook for one whistle. Remove the pressure manually with a spoon. Idiyappam also called as string hoppers is a traditional Tamil, Kerala and Sri Lankan food consisting of rice flour pressed into noodle form and then steamed. It is usually served with idiyappam kurma or coconut milk or kadala curry. Conventional method of making idiyappam is by first preparing the homemade rice flour and then adding boiling water to the flour and squeeze it through the press Add the boiling water little by little to the rice flour and make a soft dough. Knead it well and make idiyappam when it is a little hot. Boil water well, add salt and oil to it. Once water starts boiling, reduce the heat to low, add the homemade idiyappam flour, stirring continuously. I use plain rice flour for this recipe. Generally, Idiyappam and kozhukattai is made with puttu flour / Idiyappam rice flour that’s available in the market. Many a time, I find the store bought puttu flour / Idiyappam rice flour to be rancid. So I adapted this method where I roast the plain rice flour and make Idiyappam or kozhukattai.
